223: Stuffed Baked Potato With Cheese

This is a long delayed entry. In fact, I forgot that  I have this one put in my draft more than a month. And since today I am haaarrdd..ly working :p, lets finish up this write-up!

Here's another simple recipe for your lazy-to-cook day :p
Servings: Two pax
Ingredients:
3 large potatoes  cut into half
2 tablespoon olive oil
2 shallots (minced)
1 clove garlic (crushed & minced)
ground beef
2 tablespoon tomato ketchup
1 tablespoon chili sauce
1 teaspoon light soy sauce 
2 tomatoes (diced)
salt & black pepper
1 teaspoon nutmeg
1 teaspoon chopped coriander leaves
broccoli
mozarella cheese (grated)/ cheddar cheese

Instructions:
1. Scrub potatoes to clean, as the skin may be eaten (some people like it).
2. Pierce potatoes with a fork. and put them into a paper bag (avoiding it to become very dry
in the microwave oven).
3. Set the microwave at 450W and cook for 10 minutes or until done.
4. Meanwhile, heat up the pan with olive oil, add shallots and garlic. Stir to golden colour. Add in ground beef, tomato ketchup, chili sauce,  soy sauce, diced tomatoes, black pepper, nutmeg and coriander leaves.
5. Sprinkle with salt, stir fry until cooked and leave aside.
6. Put the done potatoes onto a kitchen towel and roll them on your counter top to soften for easier spoon out. (Just like the way of rolling lemons before slicing it to break down some of the fiber and juice.) Cut the potatoes into half and scoop out the centre to allow stuffing.
7. Mix mashed potato and the meat together (This will make the stuffing)
8. Fill the potato with the the mixture and complete it with broccoli. Finally, top them up with grated mozarella cheese.
9. Heat in the microwave oven at 300W for another 1 minute or just long enough to melt the cheese.
